Polenta Pancakes

Time to prepare: 30 minutes

1/2 cup cornmeal
salt to taste
1-1/2 cups flour
1 teaspoon baking powder
2 eggs
1-1/4 cup milk, more as needed
butter as needed

1. Combine cornmeal in a small saucepan with 1-1/2 cups water and a pinch of salt.

2. Whisk until smooth while bringing to a boil over medium heat, then continue to stir for about 10 minutes.

3. Turn heat off and let cool.

4. Heat a griddle or large skillet over medium-low heat.

5. In a bowl, mix flour, baking powder and a little salt.

6. Beat eggs into cornmeal, then stir in milk.

7. Add to flour mixture and stir to combine, adding more milk if necessary to make a batter.

8. Add about 1 tablespoon butter to griddle.

9. When hot, add batter by large spoon.

10.Cook until lightly browned on bottom, 3 to 5 minutes, then turn and brown second side.

11.Repeat, using more butter as needed.

Yields: 4 servings.
