Carrot Cake

Skill required: A need to eat your veggies

1 1/2 cups vegetable oil
2 cups sugar
4 eggs
3 cups grated carrots
2 cups flour
2 tablespoons baking powder
2 tablespoons baking soda
1 tablespoon cinnamon
1 teaspoon salt
1 cup chopped pecans

1. Preheat oven to 350 degrees.

2. Combine oil and sugar and beat on medium speed.

3. Add eggs one at a time. Mix until well blended.

4. Add carrots.

5. Add combined dry ingredients and nuts.

6. Pour into 3 8" tins or 2 9" tins, greased and floured. Bake 30 to 35 minutes.

Carrot Cake Frosting
2 cup butter
8 ounces cream cheese
1 teaspoon vanilla
2 cups confectioners (powdered)sugar

1. Cream butter and cream cheese.

2. Add vanilla.

3. Add sugar and beat well.
