Chocolate Guinness Cake

Cake
Butter for pan
1 cup Guinness stout
10 tablespoons (1 stick + 2 tablespoons) unsalted butter
3/4 cup unsweetened cocoa
2 Cups superfine sugar
3/4 cup sour cream
2 large eggs
1 tablespoon vanilla extract
2 Cups All-Purpose Flour
2 1/2 teaspoons baking soda

Topping
1 1/3 cups powdered sugar
8 ounces cream cheese - room temperature
1/2 cup heavy cream

1. Preheat oven at 350 degrees.

2. Butter a 9" springform pan and line with parchment paper.

3. In a large saucepan combine Guinness and butter.

4. Place over medium-low heat until butter melts, then remove from heat.

5. Add cocoa and superfine sugar, and whisk to blend.

6. In a small bowl, combine sour cream, eggs and vanilla; mix well.

7. Add to Guinness mixture.

8. Add flour and baking soda and whisk again until smooth.

9. Pour into buttered pan and bake until rise and firm - 45 to 60 minutes.

10.Place pan on wire rack and cool completely in pan.

Topping:
1. Using a food processor or by hand, mix powdered sugar to break up lumps.

2. Add cream cheese and blend until smooth.

3. Add heavy cream and mix until smooth and spreadable.

4. Remove cake from pan and ice.

Yield: 12 servings
