Giant Chocolate Sugar Cookies

Skill required: Chocolate Cookie Monster Membership 1-1/2 cups all-purpose flour
1/2 cup good-quality UNSWEETENED Dutch-process cocoa powder (Dutch-process noted on the label)
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1-1/2 cups sugar
1/2 cup (1 stick) unsalted butter, MELTED and COOLED (this is in addition to butter above - put in separate bowl)
1 large egg
1 teaspoon pure vanilla extract1.Line a cookie sheet with parchment paper or coat with buttery spray (PAM).
2. Pre-Heat oven to 375 degrees F.
3. Whisk together flour, cocoa powder, baking powder, and salt in a medium bowl. Set aside.
4. In separate bowl, combine butter and sugar and mix with electric beaters on medium until pale and fluffy. (A paddle attachment makes this easier to do.)
5. Mix in additional butter.
6. Add egg and vanilla and mix until creamy.
7. Reduce speed to low and gradually add flour mixture. Mix until just combined.
8. Use a LARGE ice cream scoop or LARGE spoon, drop dough onto baking sheets - about 4 inches apart.
9. Bake until edges are firm - about 18-20 minutes. Let cool completely.
Yields: 8 giant flaky cookies with a soft center and a crisp edge.
This recipe comes from Martha Stewart Living magazine. It looked delish. I tried it - my once-a-week meet-for-coffee/cookie/pie/cake group loved it. I also make 2 double batches at a time and no cookie has gone uneaten. Enjoy!
